The cozy-but-elevated sandwich I can’t stop making
This is my kind of sandwich.
Golden, buttery sourdough. Melty brie. Savory turkey. Crisp apple. A creamy swipe of homemade honey mustard. And then — after it’s perfectly toasted — a handful of fresh arugula finished with hot honey.
It’s sweet, salty, creamy, crispy, peppery, and just a little spicy. It feels like something you’d order at a modern café, but it comes together in your own kitchen in under 20 minutes.
And the key? You add the arugula and hot honey after toasting so everything stays balanced and fresh.
Why this sandwich works
Buttered sourdough gets golden and crisp in the skillet.
Brie melts into the turkey and apples.
Crisp apple slices add that fresh crunch that keeps it from feeling heavy.
Arugula + hot honey added at the end keeps it bright and gives that sweet heat finish.
It’s layered, but not complicated. Exactly how I like to cook.
How to Make It
Mix together mayonnaise, Dijon, and honey for a quick honey mustard.
Spread the honey mustard on one or both slices of sourdough.
Layer turkey, thinly sliced apple, and brie.
Close the sandwich and butter the outside of both slices.
Toast in a skillet over medium heat, 3–4 minutes per side, until golden brown and the brie is melted.
Remove from heat. Open the sandwich and add a handful of fresh arugula.
Drizzle lightly with hot honey.
Close, slice, and serve warm.
My Tips
Slice the apples thin so they warm slightly but still stay crisp.
Use room temperature brie so it melts evenly.
Don’t skip buttering the bread — that’s what gives you that golden café-style crust.
A tiny pinch of flaky salt on the apples takes it to another level.

Notes
Slice the apple thin so it warms slightly but keeps its crunch.
Use room temperature brie for even melting.
Do not add the arugula before toasting — adding it after keeps it fresh and peppery.
A small pinch of flaky salt over the apple slices enhances the sweet and savory balance.
Adjust the amount of hot honey depending on how spicy you like it.
