This is my kind of sandwich.

Golden, buttery sourdough. Melty brie. Savory turkey. Crisp apple. A creamy swipe of homemade honey mustard. And then — after it’s perfectly toasted — a handful of fresh arugula finished with hot honey.

It’s sweet, salty, creamy, crispy, peppery, and just a little spicy. It feels like something you’d order at a modern café, but it comes together in your own kitchen in under 20 minutes.

And the key? You add the arugula and hot honey after toasting so everything stays balanced and fresh.

Why this sandwich works

How to Make It

  1. Mix together mayonnaise, Dijon, and honey for a quick honey mustard.
  2. Spread the honey mustard on one or both slices of sourdough.
  3. Layer turkey, thinly sliced apple, and brie.
  4. Close the sandwich and butter the outside of both slices.
  5. Toast in a skillet over medium heat, 3–4 minutes per side, until golden brown and the brie is melted.
  6. Remove from heat. Open the sandwich and add a handful of fresh arugula.
  7. Drizzle lightly with hot honey.
  8. Close, slice, and serve warm.

  • 4 slices brie cheese
  • 4 slices apple fuji or honeycrisp
  • 1 handful fresh arugula
  • drizzle hot honey

Homemade Honey Mustard

  • 1 tbsp mayo
  • 1 tsp dijon mustard
  • 2 tsp honey

Instructions
 

  • Make the honey mustard: In a small bowl, mix mayonnaise, Dijon mustard, and honey until smooth. Adjust sweetness to taste.
  • Assemble the sandwich: Spread the honey mustard evenly on one or both slices of sourdough.Layer turkey, thinly sliced apple, and brie evenly over the bread.
  • Butter the bread: Close the sandwich and spread butter on the outside of both slices of bread.
  • Toast: Heat a skillet over medium heat.Toast the sandwich for 3–4 minutes per side, until golden brown and the brie is fully melted.
  • Finish with arugula and hot honey: Remove the sandwich from the skillet. Open it carefully and add a handful of fresh arugula.Drizzle lightly with hot honey. Close the sandwich again.
  • Rest and serve: Let the sandwich rest for 1–2 minutes before slicing. Serve warm.

Notes

  • Slice the apple thin so it warms slightly but keeps its crunch.
  • Use room temperature brie for even melting.
  • Do not add the arugula before toasting — adding it after keeps it fresh and peppery.
  • A small pinch of flaky salt over the apple slices enhances the sweet and savory balance.
  • Adjust the amount of hot honey depending on how spicy you like it.
