Hot Honey Turkey Brie Sandwich

For the Sandwich
- 2 slices fresh sourdough bread
- butter for toasting
- 3-4 oz sliced turkey
- 4 slices brie cheese
- 4 slices apple fuji or honeycrisp
- 1 handful fresh arugula
- drizzle hot honey
Homemade Honey Mustard
- 1 tbsp mayo
- 1 tsp dijon mustard
- 2 tsp honey
Make the honey mustard: In a small bowl, mix mayonnaise, Dijon mustard, and honey until smooth. Adjust sweetness to taste.
Assemble the sandwich: Spread the honey mustard evenly on one or both slices of sourdough.Layer turkey, thinly sliced apple, and brie evenly over the bread.
Butter the bread: Close the sandwich and spread butter on the outside of both slices of bread.
Toast: Heat a skillet over medium heat.Toast the sandwich for 3β4 minutes per side, until golden brown and the brie is fully melted.
Finish with arugula and hot honey: Remove the sandwich from the skillet. Open it carefully and add a handful of fresh arugula.Drizzle lightly with hot honey. Close the sandwich again.
Rest and serve: Let the sandwich rest for 1β2 minutes before slicing. Serve warm.
