There’s something about this smash taco series that just keeps pulling me back in. It started as a fun little experiment, and now here we are—version number three—and I genuinely don’t think I could get tired of it if I tried.

This one might be my favorite so far.

Inspired by a classic Greek gyro, these smash tacos are loaded with seasoned ground chicken, pressed thin onto a flour tortilla and cooked until crispy and golden. Then they’re piled high with tzatziki, fresh veggies, salty feta, and yes… fries. Because if you’ve ever had gyro stop, you know the fries are non-negotiable.

It’s warm, crispy, fresh, and creamy all in one bite—and honestly, it just works.

How to Make Greek Gyro Smash Tacos

Start by seasoning your ground chicken with salt, pepper, dried thyme, oregano, paprika, and plenty of minced garlic. Mix it just until combined.

Divide into small portions and press a thin layer directly onto one side of your flour tortillas. Think smash burger energy here, thin = better.

Heat a pan over medium-high heat with a little oil. Place the tortilla chicken-side down and press it into the pan so it gets that golden, crispy sear. Cook for a few minutes until the chicken is fully cooked and beautifully browned, then flip and lightly toast the tortilla side.

While that’s happening, make your tzatziki. Combine Greek yogurt, finely diced cucumber, fresh dill, lemon juice, minced garlic, salt, pepper, and a drizzle of olive oil. Give it a taste and adjust—it should be bright, creamy, and a little tangy.

For the toppings, dice up fresh cucumber, slice cherry tomatoes, thinly slice red onion, and crumble feta.

And don’t forget the fries—cook them until crispy and golden. Whether you bake, air fry, or deep fry, just make sure they’ve got a little crunch.

Ingredients
  

For the Chicken Smash Tacos:

  • 1 lb ground chicken
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried dill
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 2 cloves garlic minced
  • 4 flour tortillas
  • 1-2 tbsp neutral oil for frying

For the Tzatziki:

  • 1 cup plain greek yogurt
  • 1/2 cup english cucumber finely diced
  • 1-2 tbsp fresh dill chopped
  • half of one lemon juiced
  • 2 cloves garlic minced
  • salt to taste
  • black pepper to taste
  • drizzle of olive oil

For Topping:

  • cucumber diced
  • cherry tomatoes halved
  • red onion thinly sliced
  • feta cheese crumbled
  • french fries cooked and crispy

Instructions
 

  • Make the Tzatziki:

    In a bowl, combine Greek yogurt, diced cucumber, fresh dill, lemon juice, minced garlic, salt, pepper, and a drizzle of olive oil.Mix well and adjust seasoning to taste. Refrigerate until ready to use.
  • Prepare Fries:

    Cook fries according to package instructions (air fry, bake, or fry) until crispy and golden.
  • Season the Chicken:

    In a bowl, mix ground chicken with salt, pepper, oregano, dill, paprika, and minced garlic until just combined.
  • Assemble the Smash Tacos:

    Divide the chicken into 4 portions.Press a thin layer of the seasoned chicken onto one side of each tortilla, spreading evenly to the edges.
  • Cook:

    Heat a skillet over medium-high heat and add a little cooking oil (I used vegetable oil). Place each tortilla chicken-side down into the pan, pressing lightly to ensure full contact.
    Cook for 3–4 minutes until the chicken is cooked through and crispy.Flip and cook the tortilla side for 1–2 minutes until lightly golden.
  • 6. Assemble

    Top smash taco with diced cucumber, cherry tomatoes, red onion, feta, and a handful of fries, smother in your homemade tzatziki.
    Fold and serve immediately. ENJOY

Notes

  • Press the chicken thin for the best crispy texture
  • A hot pan is key to getting that golden crust
